A historic Parisian bakery with a bit of Japan.

This watercolour captures Boulangerie Bo at 85bis Rue de Charenton in the 12th arrondissement, its beautiful French traditional Parisian shopfront belying the modern, Japanese-inspired pastries within.

The bakery occupies a building listed as a historic monument, with original architectural details preserved beneath the contemporary interior. Founded in 2023 by pastry chef Olivier Haustraete and partner Benoit Gindre, the bakery sits a close to the Aligre market, serving a neighbourhood that has long valued artisanal food.

Interesting facts...

Olivier Haustraete's time working for Alain Ducasse in Tokyo directly shapes the bakery's style, with Japanese flavours including yuzu, bean paste, sansho pepper, and roasted malt appearing in eclairs, choux, and tarts.

The most symbolic fusion is perhaps the famous black baguette, made with squid ink.

Cool fact: 94% of all Paris residents live less than a 5-minute walk from a bakery!
