The original St. John restaurant is located at 26 St John Street, Smithfield, London EC1M 4AY. It opened in October 1994 in a former bacon smokehouse near Smithfield meat market, founded by Fergus Henderson, Trevor Gulliver, and Jon Spiteri.

The restaurant  serves historic British dishes with a modern twist, including offal specialties like roasted bone marrow, devilled kidneys, skate cheeks, and pig’s ear, reflecting Fergus Henderson’s nose-to-tail philosophy.
